our coffees this year carry the fragrance of memory—not the loud ones, but those that linger lightly. they evoke forest fruit, local wild herbs, and the shadow of flavors we might have once known well.
they seemed comfortable expressing in a quieter register, speaking softly, arriving slowly, fading gently. during processing we focused on stepping out of its way.
in return,
on their own,
they conjure an atmosphere.
their aromas meander; less perfume, more weather. their signature emerges fully in the moments just as the cup leaves your hand, nudging you towards the space to linger in: the pause in the finish.
each coffee carries a subtle specter of nostalgia:
fruit left to ripen lazily on the tree,
sweet potatoes grilling over radiant heat,
flowers at dusk after a drizzle,
their intention is simple: these coffees invite into a personal meeting.
listen inward, look closely, await resonance.
“reminded me of perfectly seasoned ‘tsukemono’ crafted by grandma (complement, of course!). the balance of sweetness, fruitiness, and a pronounced yet clean fermented flavor is impressive.” - tetsu

“they felt like a warm day in the field for me, sweetness in the air with a soft floral scent. aroma feels familiar and pleasant, and the sweetness lingers like afternoon tea.” - kath
our coffees come with this reminder: these are fleeting alignments—of tree and cherry maturity, of seasons compressed into brief windows, of the silent hopes of grower, producer, roaster, brewer, and drinker. every cup is singular—not merely for its rarity, though rare it is—but because this exact convergence will never come this way, in this form, again.
- this reflection on our harvest was prepared as part of the collaboration brief with ITO for the guided tasting of the Sieve midcanopy collection on august 16 & 17, 2025. tetsu and kath were guests at the tasting and their impressions were woven into the above reflection.
