nuanced & deeply composed

php 2,000/ 120 grams roasted whole beans

no one truly has a name for it—only that it is remembered as the sweet coffee. elders we met of the binukid-speaking talaan-dig talatunganon tribe passed these trees down like immortal legacies with whispered instructions that they be rooted in forest soil.

in honor of those elder farmers, revered tribe elders, who welcomed us into the jungles that nurtured these coffees decades ago when no one else cared to look as deeply and, more importantly, to keep alive their sage guidance, we refer to these coffees as the kalasan, a binukid word for forest.

the kalasan is a landrace variety, an unnamed lineage that has lived generations within an ecology—adapting, shifting, and being shaped by its environment. across the world, landraces carry the memory of forests and fields; they are the result of centuries of quiet selection, or allowance, less about uniformity and more about persistence and belonging.

our studio seeks out the oldest of these trees, accessible only by arduous hike towards 1,900 masl on the edge of the mt kalatungan national park, mostly by way of asking where the grandparents’ coffees are. under dense canopy, the kalasan was gifted with isolation and was left to grow wild and into a truthful expression.

- our post harvest stewardship: the kalasan in this collection is 100% of the variety from one single farm whose trees we had verified with WCR (world coffee research). all Sieve studio processed coffees had an average cherry ripeness between 23 to 26 brix and were processed shortly after harvest at our mindanao studio. all our coffees were fermented in multiple stages to achieve our desired balance in the final liquor. they were then let to dry in in an indoor set up for better management over pace of drying.

although our coffees received thoughtful care, we remember that these coffees are gifts from forested origins and our processing approach is less about control and more about creating space for natural reactivity to inform the impressions in the cup you will soon get to know.

- across our midcanopy collection is a shared current of care and quiet observation; we speak more about this harvest in our processing notes

what we include, and why

sieve collections are designed with care, for both your experience and a broader ecology: to preserve quality, our coffees are sealed in foil bags with a breathable fabric film rather than the plastic escape valve.

each coffee includes a postcard about the coffees and its own set of reusable sensory echoes cards (three cards per coffee); all these elements are held together by a collectible textile wrap with original artwork from
sans ens studio, silkscreened by hocus manila.

we wrote an
ode to the often overlooked packaging to describe our design intentions and how you can engage with each element that's included with our coffees

when do we ship

your order total is inclusive of shipping fees from our mindanao studio to anywhere in the philippines.

each coffee is roasted once an order is placed, following our roasting schedule.

we ship orders from our studio in mindanao twice a week: every tuesday and saturday. shipment takes at least four days to reach any destination in the philippines from our location in cagayan de oro. once your order is on its way, you’ll receive an email with an airwaybill tracking number, from then you can follow the delivery progress on your own.

our roasting practice

roasting, for us, is an exploratory practice, a way to understand the coffee more deeply and let its own qualities lead the way. our roast profiles are guided by the coffees themselves, interpreted through the lens of each collection’s shared thread to offer an honest and personal expression of the cup.

for our midcanopy collection, the roast encourages the coffees to sit at a quieter register, a liminal space where unfolding can happen gently.

each coffee is roasted fresh upon ordering and our roasts benefit from some rest, often 7–10 days after roasting, this supports its personality to settle and slowly open. some cups, of course, bloom beautifully even before then; feel welcome to try them earlier.

our naturals may show gentle variation in roasted bean color, as most naturals do.

we’ve asked some friends to share their brewing recipes for these coffees and you can find them gathered in a brewing suggestions list here.

still curious about something?feel welcome to reach out to thestudio@sieve.coffee, and we’ll respond within a day or two.
