once valued only for hardiness, these robustas are now quieter vessels of origin: forest-grown, farmer-cherished, thriving because the shape of value returned to hands that tend rather than extract. 

when their commercial worth dimmed, as so often happens with commodities, these ageing robusta trees found themselves left to grow untamed. over time they grew tall, rising into the midcanopy, their crowns reaching toward the native forest ceiling. they outgrew the containment of crop prescription and unfolded as elder trees, offering shade to the younger robustas that root beneath them. what was once overlooked became structure, shelter, and continuity.

robusta, too often cast into into the margins of specialty coffee conversations, holds its own myth among the adventurous as a rare profile grown more diverse through survival. these trees are in the care of a family who treasure them not as an afterthought but as ancestors, living pillars patiently sweetening under the shade of layered canopy where all living is shared.

a reminder that in little time, a forest can reclaim trees in its own definition of resilience.

- our post harvest stewardship: all Sieve studio–processed coffees were harvested at an average cherry ripeness of 23–26 brix and processed shortly after harvest at our Mindanao studio. 
we ferment in multiple stages to achieve a desired balance in the final liquor. they were then let to dry in in an indoor set up for better management over pace of drying.

although our coffees received thoughtful care, we remember that these coffees are gifts from forested origins and our processing approach is less about control and more about creating space for natural reactivity to inform the impressions in the cup you will soon get to know.

what we include, and why

sieve collections are designed with care, for both your experience and a broader ecology: to preserve quality, our coffees are sealed in foil bags with a breathable fabric film rather than the plastic escape valve.

each coffee includes a postcard about the coffees and its own set of reusable sensory echoes cards (three cards per coffee); all these elements are held together by a collectible textile wrap with original artwork from
sans ens studio, silkscreened by hocus manila.

when do we ship

your order total is inclusive of shipping fees from our mindanao studio to anywhere in the philippines.

each coffee is roasted once an order is placed, following our roasting schedule.

we ship orders from our studio in mindanao twice a week: every tuesday and saturday. shipment takes at least four days to reach any destination in the philippines from our location in cagayan de oro. once your order is on its way, you’ll receive an email with an airwaybill tracking number, from then you can follow the delivery progress on your own.

our roasting practice

roasting, for us, is an exploratory practice, a way to understand the coffee more deeply and let its own qualities lead the way. our roast profiles are guided by the coffees themselves, interpreted through the lens of each collection’s shared thread to offer an honest and personal expression of the cup.

for our midcanopy collection, the roast encourages the coffees to sit at a quieter register, a liminal space where unfolding can happen gently.

each coffee is roasted fresh upon ordering and our roasts benefit from some rest, often 7–10 days after roasting, this supports its personality to settle and slowly open. some cups, of course, bloom beautifully even before then; feel welcome to try them earlier.

our naturals may show gentle variation in roasted bean color, as most naturals do.
